Recipes – FETTUCINE BOSCAIOLA delicious
- 2 teaspoons olive oil
- 200g button mushrooms, sliced thickly
- 2 cloves garlic, crushed
- 100g cubed or sliced LASCo Marlborough Garlic salami
- 100g cubed or sliced LASCo Italian New York Cut salami
- ¼ cup dry white wine
- 1¼ cups (310ml) cream
- 500g fettuccine
- 2 – 3 cups baby spinach (optional)
- 2 tablespoons coarsely chopped fresh chives
Optional – handful of flat leaf Italian parsley & shaved parmesan cheese for garnish
- Heat oil in a large saucepan: cook mushrooms, garlic and salami, stirring, until ingredients are browned lightly. Add wine: boil, uncovered, until wine reduces by half
- Add cream to mushroom mixture: reduce heat. Simmer, uncovered, until sauce thickens slightly. Add baby spinach (optional)
- Meanwhile, cook pasta in large saucepan of boiling water, uncovered, until just tender, drain.
- Add chives and pasta to sauce: toss gently until mixed well.
- Sprinkle with parmesan cheese and Italian parsley
Preparation time 10 minutes. Cooking time 20 minutes. Serves 4 per serving
